Happy Monday! Today I'm feeling generous so I'm doing a two for one on the blog ;) I'd like to share with you a two course meal. You can have these two dishes on the same meal or they could go separate ways, that's totally up to you. 

The first one is a salad. Considering the scorching heat we are suffering lately this is hands down the most appetizing meal at the moment.

12 shrimp cooked
1 or 2 oranges
Watercress
Lettuce
Cooked crabmeat
1 large ripe avocado pitted, peeled and diced
Marinated onions 

  • To make the marinated onions combine onions, vinegar, salt and sugar. Let stand at room temperature for 30 minutes to soften and mellow the flavor of the onion
  • Arrange the crab, shrimp, orange segments, avocado cubes and greens in a shallow bowl or platter
  • Scatter the onion and drizzle the dressing



I'm pretty sure the main course is going to become your new favorite way to have pork. Perfect, golden meat that mixes its salty taste with the sweet ripe pineapple. A mouthwatering dish packed with flavor.

Pineapple slices
Brandy 
Virgin extra olive oil and salt
  • Place pork loin in a shallow roasting pan
  • Rub the meat with olive oil and sprinkle some salt
  • Roast in the oven for about one hour and a half at 180ºC (350ºF)
  • Every 30 minutes pour some brandy
  • Remove from the oven and make deep cuts every 2cm
  • Introduce a slice of pineapple in each cut
  • Pour some juice from the roast on top and serve warm
