Mondays We Cook: Ricotta and Apple Cake

Happy Monday, everyone! Today I want to share with you one of my favorite recipes, a cake whose main ingredients are ricotta, raisins and apple. It's perfect either for breakfast or to surprise your guests if you are hosting a tea party.





Ingredients
To make the short pastry you will need:
250 gr of flour
100 gr of white sugar
A pinch of salt
125 gr of cold butter

For the filling you will need:
500 gr of ricotta cheese
1 teaspoon of vanilla extract
50 gr of raisins
100 gr of sugar
3 eggs
2 dl of heavy whipping cream
500 gr of Granny Smith apples

12 portains, each of them has 1680 kJ/400kcal – 11g of protein – 19g of fat – 43g carbohydrates

Directions
Cooking time: 1h ½
Baking time: 1h ¼
1. Mix the flour, sugar, salt, butter and 2 or 3 spoonfuls of cold water. Put the short pastry in the fridge for an hour.
2. Mix the ricotta cheese with the vanilla and sugar. Separate the yolk from the white of the eggs. Whisk the whites with the cream.
3. Mix the yolks and raisins with the ricotta and then add the mixture of whites and cream.
4. Preheat the oven at 180ºC
5. Cover the mold with the short pastry and add the filling. Then put slices of apple on the top.
6. Bake in the oven for 1 hour and 15 minutes.
