Mondays We Cook: Thanksgiving Pumpkin Pie

Thanksgiving is around the corner, so today I want to share with you my pumpkin pie recipe. I had never tried this delicious dessert before I moved to the US. However, I quickly started falling in love with all things pumpkin: pumpkin cake, pumpkin pie and every year I can't wait for fall to drink pumpkin spice latte!

Without further ado, here's the recipe.

Ingredients:

Prebaked and cooled pie crust
3 eggs
425 gr of pumpkin purée
120 ml of whipping cream
110 gr of brown sugar
1 teaspoon of cinnamon
1/2 teaspoon of ginger
1/8 teaspoon of cloves
1/2 teaspoon of salt

Directions: 

  1. Preheat an oven to 375°F (190°C).
  2. In a bowl, whisk together the brown sugar, salt, cinnamon, ginger, and cloves. Add the pumpkin, eggs, and cream and whisk to combine.
  3. Pour the filling into the prebaked piecrust and bake until the center is set, 60 to 65 minutes, covering the edges of the crust with aluminum foil or a piecrust shield after 30 minutes if they brown too quickly.
  4. Transfer the pie to a wire rack and let cool completely, at least 2 hours, before serving.
