Happy Monday, dear readers! I hope everybody had a wonderful weekend. I was wondering earlier if it was a good idea to post a recipe today since some of you may still feel stuffed after the Thanksgiving feast. In the end I could not resist posting this savoury pie.


Spinach raisin and pine nut quiche recipe

There are so many good things about this dish. Let's start with the fact that raisins, pine nuts and spinach are a great source of energy (Popeye has already taught us that) and they are healthy too! Then, there's the contrast of flavors sweet and salty which makes it all the more pleasurable to eat. Finally, it is perfect for every occasion. You can have it for lunch or dinner. You can also combine it with other dishes fo a dinner party.

Spinach raisin and pine nut quiche recipe

Ingredients

Puff pastry
Spinach, a bunch of fresh spinach or ½ a package of frozen spinach
A cup of raisins without seeds (50 grams)
3 eggs
30 grams of pine nuts
200 ml of cream or milk
cheese

Directions

  1. Preheat oven at 200ºC (392ºF) for 15 minutes. 
  2. Cook the puff pastry until it is a little golden. 
  3. Mix the cooked and drained spinach with the eggs, the raisins, the pine nuts and add the cream. 
  4. Pour the mixture on the puff pastry, sprinkle some cheese.
  5. Bake for ½ an hour.
